Mehdi Rashidian was destined to serve pizza. When he and his family moved to Calgary from Iran in 1989, the former pharmaceutical sales and marketing manager’s first job was delivering pizzas. He then tried his hand at everything from auto repair and dishwashing to carpentry and bus driving before he opened his first Domino’s Pizza franchise. Eventually, he owned six, but wanted a place to call his own. In 2010, he and his wife Sarah Javaheri launched Shiraz, one of Calgary’s very few Persian and halal restaurants.
Hummus
A delightful dip made of garbanzo beans, tahini sauce (sesame seed paste), olive oil, garlic and fresh lemon juice.
Kashk-e-bademjan

Roasted eggplant mixed with kashk (whey), flavored with sautéed garlic, onions & mint.
Mast-O-khiar
(Yogurt &cucumber dip) Home made yogurt with chopped cucumber and mint. Dolmeh Six grape leaves stuffed with rice, chopped onions, dill weed, olive oil, mint and spices.
Torshi
Traditionally aged diced mixed garden vegetables, such as carrots,cauliflower, eggplant and herbs in wine vinegar.

(Eggs & potatoes salad) A Persian cold salad made from a combination of egg, potatoes, carrots, green peas, chicken and mayonnaise.

Ash-e-Reshteh
(Bean soup) A delicious cooked mixture of fresh chives, parsley,cilantro, spinach, tarragon, garbanzo beans, kidney beans and Persian noodles,topped with whey, sautéed onions, garlic and mint.
Green Salad
Mixture of romaine lettuce, red cabbage, cucumber, tomatoes, mixed with lemon juice dressing, and olive oil.
Shirazi Salad
Diced tomatoes, onions, cucumbers, and chopped parsley with our fresh lime, lemon juice and olive oil dressing.
Greek Salad
Combination of romaine lettuce hearts, tomatoes, feta cheese, olives, onions & cucumbers.
Chicken Barg Kabob
(Chicken breast) Specially selected chicken breast,marinated, skewered and charbroiled. Extra skewer of chicken breast.
Vaziri
Combination of one chicken breast and one beef koobideh, skewered and charbroiled.
Kabob-e-Barg
(Strip loin) Center cuts of strip loin, skewered, marinated and charbroiled.
Kabob-e-Koobideh
(Ground beef) A mixture of two skewered and broiled ground beef, minced onions and seasonings.
Rack of Lamb
Enjoy the rack of lamb (4 pieces), with basmati rice, flavoured with saffron served along with side of grilled tomatoes and onions.
Sultani
Combination of barg kabob (strip loin) and koobideh, skewered and charbroiled.
Kabob-e-Chengeh
(Veal shish) Chunks of marinated sirloin veal, skewered with green bell peppers, onion and tomatoes.
Lamb Shanks
Basmati rice flavoured with saffron, served with stewed lamb shanks.
Khoreshteh Fesenjaan

(Pomegranate Stew) Chicken, onions, finely processed walnuts, and pomegranate juice are simmered to perfection. Serve with saffron steamed basmati rice.
Ghormeh Sabzy

(Persian green herb stew) Sautéed chunks of beef and fresh herbs (parsley, chives, cilantro and methi leaves), simmered in our special sauce with kidney beans and dried limes.

Shiraz Persian Cuisine’s Mehdi Rashidian has created his own unique pizzas, and they’re the only non-traditional Persian dish on the Centre Street Northeast restaurant’s menu. These 14 Persian pies are topped with saffron rice and various combinations of ingredients. The saffron chicken breast pizza won top honours at Pizza Pigout, an annual citywide pizza contest and fundraiser. The kashk-e-bademjon (eggplant dip) pizza is also a big hit.
